It’s Sunday afternoon and we are enjoying a quiet couple of hours before our evening church service. We ate lunch at church so when we got home I put Mr4 right down for his nap and we all chilled on the couch while the boys watched The Adventures of Tin Tin. I got too many loads of laundry finally folded and put away then laid out this weeks meals. Summer is here but we still have baseball practices and game so we are in a sort of mesh of two seasons. Here is what we will be eating:
Monday- Pork and Cabbage Stir fry I have some pork in the freezer I’ll thaw and cut in small pieces. Cabbage is a favorite budget friendly veggie that we all eat. I’ll chop onions and carrots to toss in the pan with the pork and cabbage and make a mixture of soy, sesame oil, cornstarch and water and toss it all together. I’ll cook a bit of angel hair pasta for the guys, I’ll probably have mine as is. The boys will enjoy shaking sesame seeds on top right at serving.
Tuesday- Tacos My Wal-Mart pick up order didn’t go as planned so I don’t have tortilla chips or tortillas so I will top some rice with black beans and beef from the freezer that has been coated with cumin, chili, garlic and onion. I will have it taco salad style and top romaine with the meat mixture. We’ll have shredded cheese to top it off.
Wednesday- We are having pizza at church so I’ve got the night off of cooking!
Thursday- Leftovers
Friday- Pasta with salad. If we have baseball that night I’ll make it in the afternoon and bake in with mozzarella cheese on top and bring it right to the field with paper plates.
Saturday- Butter Chicken My Instant Pot will work for me here as I’ll make it early in the day and it’ll be waiting for us. I’m hoping we can have a good day of clearing our yard in the afternoon. I will utilize my second IP Liner and make some rice while we get cleaned up for yardwork all afternoon.
Sunday- Roasted Chicken with veggies. We’ll have this right after we get home from church. I’ll either pick up a chicken roaster or we’ll have chicken thighs that’ll I’ll get prepped and in the oven to cook while we are at church.

I am so impressed by your planning and organization. I struggle to even defrost meat for dinner the next day.
When you make a simple plan like this it’s much easier to remember what to take out of the freezer. Try it out even for a few days ahead!
Yum, butter chicken. Iām trying to be better about planning out my meals for the week. Saves me from scrambling at dinner time and less trips to the grocery store. Seeing your planning motivates me to keep it up.
Great meal planning plan! It is the best to get the night off cooking! My husband is currently fasting during the week for weight loss so it’s just me feeding myself and our 2 year old and I am definitely into eating the same meal for days in a row just so I can do less work š
