
It’s a pizza night and it’s a hot summer day. You dont want to heat up the oven for your pizza night but you dont want order take out either. Why not use your grill!

Grilled pizza is one of our favorite ways to change up our weekly pizza night. Here is how I do it:
I make my favorite pizza dough (from goodcheapeats.com), you could use any recipe or even store bought dough. Portland Pie company, a Maine based pizza shop, offers a super delicious pizza dough at most grocery stores in Maine. Any dough will do, just allow time for rising if you are making your own.
Gather whatever toppings you want to top your pizzas with. We make fairly classic pies with tomato sauce, cheese (I like a blend of mozzerella and provolone) and pepperoni. Other toppings that are super yummy are meatballs, caramelized onions, mushrooms, seasoned ground beef, and anything else you have on hand.
Preheat your grill to medium heat.

While the grill is heating up get everything set up, once the grill is hot the process moves fast. The key to making it work on the grill is to have everything ready to go. I load my tray with the toppings, sauce, cheese, and plates. I roll out the 6 individual doughs layered between parchment paper. When you roll them out a spray or brush of extra virgin olive oil is extra helpful.

Lay the dough on the grill, it will not stay in a perfect circle unless you are very gifted in working with dough and you have extra stamina in your forearms for the hot grill. After a minute or two check the dough, if it releases from the grill easily flip it over.
Now add your sauce, cheese and toppings. Close the lid and let it cook for 2-3 minutes or until the cheese is melted. When it’s ready to your liking, slide pizza on a cutting board. Slice it up, put it on a plate and enjoy!


You could grill up veggies and meat right on the grill and save yourself even more time at the hot stove. You could mix it up with different sauces, pesto would be delicious, or white pizza and lots of fresh herbs. There are so many options!
