High Pressure Potatoes

The simplest, most delicious way to enjoy potatoes. Just about hands free cooking and goes great with grilled meat and veggies in the summer when you dont want to heat up the kitchen at the stove.

 2 lbs small potatoes. Bite size is best, we also like fingerling.
 1 cup kosher or sea salt * See note
 6 cups water
 2 tbsp butter
 optional: fresh herbs, garlic

Add salt and water to Instant Pot. If salt isn't dissolving use "saute" button for a few minutes to warm the water and stir to dissolve the salt.

Add potatoes, close lid, set to "sealing" and cook at high pressure for 4 minutes. After time, allow to natural release for 15 minutes.

If necessary, release pressure. Use a slotted spoon or spider (or collander) to remove potatoes from water. Place in a bowl and allow to dry. You'll notice the skin dries and sometimes wrinkles.

Once potatoes are dry toss in butter. If using add garlic and herbs. Enjoy!

I use kosher salt and just wait for it to dissolve. You could also use sea salt or another fine salt. I dont recommend using table salt, the flavor will not be optimal.
