Happy weekend my friends! I managed a Sam’s Club pick up order this past week. It is working well for me to rotate between Sam’s Club and Walmart, I may add in Hannaford if I can get a time slot sometime. Avoiding the risk of Covid-19 is one thing but avoiding the lines is another, I love pick up! Here is what I bought and how I plan to use the food in our upcoming weeks.

Half and Half- for our coffee. I often bounce between milk and half and half lately. I was drinking it black since I am Intermittent Fasting but I found myself with gradually increasing heartburn that was quite uncomfortable. I just wait to have my coffee now and enjoy it more too.
Milk- cereal, drinking, I may make yogurt too.
Tortillas- taco Tuesday and my boys like peanut butter and jelly roll ups for lunch almost daily.
Romaine lettuce- Salad bar has been a big hit for dinner for us lately, I’ll blog more on that soon. I also try to have salads for lunch at least a couple of days a week.
Shredded cheddar cheese- grilled cheeses for lunches, on eggs or in salads.
Pork Butt- I’m probably going to make pulled pork for Sunday dinner. I have some cabbage hanging around so I’m debating on a slaw to go with it.
Feta cheese- Mr2 loves a bit of feta on his fried eggs, I also love it with a veggie hash and fried eggs. We also like it on salads.
Mozzarella cheese- I’ll use this on pizza and maybe meatball subs if we have them at the end of the week.
Almond milk- smoothies, I dont usually buy it at Sam’s since it comes in the double pack but we’ll use it up.
Pepperoni- pizza night as well as snacky lunches.
Pecorino Romano Cheese- Our favorite and preferred grating cheese for pasta,pizza and anything else we top with cheese. I save the rinds and simmer them in soup for more flavor too.
Strawberries- I have to either have strawberries designated for snacking or for a recipe. My children blow through a 2 pound pack in very little time. We had these with dinner one night and I topped Friday pancakes with them and whipped cream. It was a nice change up from our regular pancake routine.

Gala apples- these are our favorite apples. They are nice and crisp, well priced and dont brown a ton when sliced. Apple nachos are a favorite afternoon snack here.

Baby spinach- I use this in veggie hash to top with eggs, mixed with the romaine for salad, and chopped and mixed with cheese for quesadillas. The boys dont even fuss when it’s cut small and melted with cheese in a quesadilla. I have been using it a lot in these Hulk Blender Muffins. I modify them a bit to use regular oats sometimes and make them into regular muffins. The boys love them because of the chocolate chips and I love that they are eating oats and spinach.
Ground beef- I made this into 3 meals worth of burger nights, more on that soon!

Eggs- Breakfast, lunch, and dinner, probably my favorite food!
Carrots- I always buy the 5 pound bag. We eat carrot sticks with lunches with dip or hummus, I often include them in soups as well or carrot muffins.
There is my plan for this Sams Haul. I am very grateful for Gods provison of full trips to the grocery store like this, especially in our current times. Having a plan is the best way to make the most meals out of the food you have and to not let anything go to waste. Eating simply is my goal right now as it has been easy to want to cook all the things while we have more time at home. I have been calling some friends who live alone to see if they need anything while Im going to the store and it’s been a good way to make sure those folks are still eating nourishing food but not going to the store if it’s too much of a risk for them.
