Darn Good Cookies

                Mister and I have been married for 13 years. We have been together for 18.  I just found this recipe from his grandmothers’ side of the family this past week and I’m wondering why there were holding out on me! They are simple, delicious and forgiving.  That’s the best way to have a cookie IMO. With little boys running around and my best time to cook during their awake hours I’m usually multitasking while baking a treat. Like right now, I’m typing this while they bake.  It is a snowy day with big fat snowflakes and red cheeked boys so it’s the perfect day to bake, I recommend you do the same!

Darn Good Cookies

1 cup butter

1 cup brown sugar

1cup white sugar

1 cup peanut butter

2 eggs

1t vanilla

1 ½ cups all-purpose flour

1t baking soda

1t salt

12 oz chocolate chips

3 cups oats (I like old fashioned)

½ cup walnuts (optional)

Cream together butter, sugars, and peanut butter. Add eggs and vanilla to combine.Add flour, baking soda and salt, mix together. Add in chocolate chips, oats and walnuts (if using).   Bake at 350 degrees for 11-14 minutes. Allow to set up on pan before moving to a cooling rack.

*I recommend a large scoop to make these cookies. They need a larger size to maintain the chewy texture.

*slightly under bake  until the edges are just browned.
