No Boil Baked Mac and Cheese

No need to boil the pasta with this super easy and versatile baked mac and cheese.

 4 cups Elbow macaroni
 16 oz Shredded sharp cheddar cheese
 8 oz Shredded colby jack cheese
 24 oz Cottage Cheese
 4 cups Boiling water

Preheat oven to 350 degrees.

Coat 9x13 pan with cooking spray, olive oil or butter.

In a large bowl, stir together pasta, cheese (all but one handful) and cottage cheese. Pour into prepared pan. Top with a reserved handful of cheese.

Place pan in oven and pour boiling water evenly over pasta and cheeses.

Bake for approximately 1 hour. Remove from oven and let set for 15 minutes.

-Any small pasta can be used we love macaroni, mini pene, and medium shells.
-You may find you need to use a spoon to nudge around the mixture after pouring the water into the pan. Its important to get the water well distributed before baking.
-The dish may look very liquidy at the hour cooking mark . Once out of the oven it will set and distribute properly.
-You can easily add frozen vegetables and/or a protein like broccoli or peas and keilbasa.

  1. Will have to try this for my kids. It is similar to a baked mac and cheese I use as a dish to take to people, but not cooking the noodles first is intriguing!
