Quick to throw together and delicious in granola or straight out of the container. I really love how this recipe produces lots of large clumps of granola. Perfect for snacking on!

  cup maple syrup
  cup brown sugar
 ½ cup oil (canola, vegetable, coconut)
 2 tbsp vanilla
 1 tsp cinnammon
 ¼ tsp salt
 ½ cup flaked coconut
 1 cup chopped nuts
 5 cups old fashioned oats

In a large bowl, mix first 5 ingredients together.

Add coconut,salt, nuts and oats

Pour mixture onto a parchment lined pan. Use potato masher to firmly press granola into pan.

Bake granola at 325 degrees for 40-55 minutes or until golden brown on edges.

Take pan out of oven and let cool completely before breaking up into pieces and storing in an air tight container.
