Pantry Challenge Update

     We are 5 days into our September Pantry Challenge. We are eating well! Curious about a Pantry Challenge? Read all about it in my post Pantry Challenge- What is it? Here is how the meals have broken down.

September 1

B- Eggs, toast and applesauce for boys, Mister and I had sautéed veggies with eggs and coffee.

 L-Grilled maple Dijon pork chops (from Weston’s Meat and Poultry) Roasted potatoes (from Thunder Road Farm) and Beets (from Stutzmans Farm)

D- Yogurt, granola and fruit. On Sundays we have our big meal right after church so Sunday evenings it’s light snacky style.

Extras- I did some prep cooking this afternoon. Meatballs, granola, and energy bites.

September 2

B- Zucchini waffles for the boys, sautéed veggies and eggs for Mister and I, coffee and bacon

L- Cookout at our friends, I made a bundt cake and an 8×8 of chocolate zucchini cake with two cake mixes in the pantry.

D- Salad with leftover roasted pork for Mister and I, boys had yogurt, granola and banana.

September 3

B- Zucchini muffins from freezer and smoothies

L- Homemade crackers, cheese, carrot sticks and energy bites. Apples and Fruit strips for snacks.

D- Chili from freezer and I added ground beef to it. We topped with the tortilla chips and cheese.

September 4

B- Oatmeal with choice of mix ins. Cranberries, maple syrup, blueberries are all our typical choices.

L- PB&Js with homemade bread, Mister and I had a jar of curry and rice in the freezer.

D- Half a box of spaghetti and half a box of pene with meatballs and sauce. I pureed an eggplant in the sauce, shhhhh don’t tell the boys! I used a couple of cheese ends to flavor the sauce since I dont have any grating cheese on hand.

September 5

B- Eggs, toast and applesauce for the boys. I had sauteet mushrooms, zucchini, and spinach with feta and fried eggs, coffee.

L- Chicken nuggets and a quarter of a bag of French fries for the boys. Popped a bag of frozen edamame in the microwave for a veg. Since the oven was on I made a quick batch of crackers.  I ate leftover from the salad I made last night for dinner.

D- Stone Soup since we read the story with Mr3 and Mr4 during school time. I was already planning to make some sort of soup with some bones and veggie bits in the freezer so I had him find a stone and he helped me wash it and make it up. The look on his face when I asked if he’d like to make real stone soup was absolutely priceless! I added carrots, the leftover edamame from lunch and farro. The bread machine made a loaf of bread timed to be fresh and warm at dinner. I cubed some cheese and we were good to go.

I’ll be posting every few days on the challenge so stay tuned! Tomorrow I’ll go to the store to grab milk, bananas and eggs. I completely forgot about my Misfits Market delivery so I’ll adjust my next two weeks of grocery shopping to reflect that $23 spent on produce.
