Pantry Challenge-Mid Month Update

The month is going well! If you follow my Instagram you saw that last weekend I overspent for the week between my Misfits box and a trip to Shaws. Here is how it has broken down so  far:

Misfits- $23.00

Shaw’s- $33

Total- $53

Our meals are going well. I’m baking a bit than usual and the boys are loving the treats. Meals are needing to be portable with Football in the evenings. Here is what the meal plans looked like for the week.

9/6-

B- Muffins, banana or applesauce and a boiled egg.

L- PB&J’s

D- Calzone, carrot sticks, and peanut butter cookies at the football field. I made several extra for leftovers and froze 4 more for future CC lunches.

9/7

B-Pancakes and scrambled eggs.

L- Lunch out since we had a change for an afternoon out with our big boys.

D- Just Mister and I home for dinner and we had leftovers from lunch and leftover calzone and cucumbers. Our neighbor keeps bringing us fresh cukes from her garden!

9/8

B- Just Mister and I so we enjoyed toast, bacon, sautéed veggies and fried eggs, coffee

L- Steak and roasted cauliflower. I also prepped some roasted potatoes as well as grape nuts.

D- Catch as Catch Can after church. I had a sandwich, the big boys had yogurt and granola and had a banana.

B-Breakfast sandwiches with a stray bagel and lonely bag of bread, cantaloupe.

L- PB&J’s, sliced apples

D- Stuffed pepper casserole. Mister and I liked it, boys not so much. I’ll still try making it again to see if they’d eat it as it was great way to get a ton of veggies into the rice and cheese.

B-Zucchini muffins, bananas. I had a banana, boiled egg and coffee.

L- Sandwiches, sliced cukes, apples, pears. I had leftover steak and cauliflower.

D-Tacos

B-Oatmeal with mix ins. Maple syrup, blueberries, dried cranberries, walnuts, and peanut butter are all options.

L- Grilled cheese

D- Lasagna at church before Wednesday service. I used a package of sausage from the freezer and polished off the mozzarella, cottage cheese and sauce I had in the fridge.

B- Toast and eggs

L- Fridge clean out! Mr1 had lasagna. Mr2 and Mr3 had banana, yogurt and granola, Mr4 had a calzone. I nibbled on all of it for my lunch.

D-Sandwiches at football

9/13-

B- Pancakes from freezer for the boys. I had the last of the roasted veggies and fried eggs.

L- cantaloupe, salami and cheese

D- Cookout at church

I aim to go to the store today. I’ll get 2 gallons of milk, one being for yogurt. I’ll also pick up bananas and some lettuce. I’m working on the meal plan for the week as it’s going to be a busy one with football and special meetings at church.

  1. Melissa I have a couple good zucchini recipes if you are interested. I’ve been given an enormous zucchini so I’m trying different ways to cook it.
