Our family is participating in a Pantry Challenge for the month of September. Basically we commit to using only what we have in our pantry, freezer and fridge for the month of meals. OK friends, we are nearing the end. I can see the light and not at the end of the tunnel, I mean the refrigerator. It’s seriously empty! Here is what we ate this past week:
9/20
B-Muffins, eggs, bananas
L- At Common Ground Fair
D- Pizza. We just bought one and though we all could have eaten more we stuck to 1 piece for the three youngest boys and 2 for Mr1, Mister and I. Yes we could have eaten twice as much but we managed just fine.

B-Cereal, bananas
L-Chicken salad
D- Burgers, grilled onions, corn on the cob

9/22
B-Cereal, eggs, bananas
L-Roast chicken, squash and potatoes. Apple crisp from the freezer.
I meal prepped crackers, broth, and potato leek soup.
D-Oatmeal

B-Eggs and toasted hot dog buns
L- I had soup, the boys had quesadillas and cucumbers
D-Grilled steak with steamed broccoli

B-Muffins
L-Pizza at CC, I had soup, cukes and carrots
D-Chili Cornbread casserole

B-Brown rice farina
L-PB and honey with broccoli. Weird combo but it got a veggie into them. Chicken salad sandwich, I had hash with the roasted squash and potato with eggs.
D-Lasagna at football
9/26
B- Instant Pot Baked Oatmeal
L- PB& honey, leftover chili cornbread casserole, chicken salad.
D-Breakfast sandwiches
9/27/19

B- Pancakes. I was out of eggs so I looked up this pancake recipe from Safely Delish and they were great. The boys all said I should use this as my go to recipe! I added cinnamon, flax and blueberries to half of them.
L- Some had toast, I had soup, some had chili casserole.
D- Calzones from the freezer and a pizza with bacon, collard greens, onions and cheese. I didn’t have any sauce on had so we made it a white pizza.
Mister ran to Shaws for me, here are my totals as it was the last shopping trip of the month!

I’m so excited! I set the goal of $100 at the start of the month but it truly wasn’t realistic. We typically spend $800-$900 a month so I am very excited to have saved as much as we did. It was a team effort.The fridge is about empty and is scrubbed clean. I’ll report the last few days next week and some other reflections , be sure to stop back by!
